Almond Encrusted Salmon

You’re Going To Love This Healthy And Tasty Sweet and Spicy Almond Encrusted Salmon - Another Great Recipe From Carol!

Ingredients for Spicy Crusted Topping:

4 ounces of light brown sugar

½ cup plus two tablespoons sliced almonds

2 ½ tablespoons Ghee

1 ½ tablespoons sweet Hungarian paprika

1 teaspoon sea salt

1 teaspoon black pepper

1 teaspoon ground cumin

1 teaspoon ground cayenne – or to taste

Directions for Spicy Crusted Topping:

Combine all the above and store in a glass jar for use as needed. You may add extra almonds as needed to the jar

Ingredients:

Fresh Alaskan salmon. It could be an individual serving of 4-6 ounces each, or a 1 ½  pound piece of skinless salmon filet.

Dijon mustard- optional

Spicy Topping (from above)

Directions:

Remove skin and any pin bones from salmon. Lightly brush salmon with Ghee, or lightly coat with a good Dijon mustard ( I prefer Maille), and generously spoon the almond mixture to cover the salmon. Bake on an oiled baking sheet in a 400F oven for 10-15 minutes, or to desired doneness.
