Warm Up With This Delicious Cream of Mushroom Soup
Makes four to six servings
Ingredients:
2 T organic butter
One-half pound cremini mushrooms
3 T of organic cornstarch, mixed with ¼ cup of water, to create a slurry
¼ teaspoon salt and 1/8 tsp of black pepper
1 quart of low sodium organic chicken broth
1 C organic half and half
Directions:
In large saucepan, heat butter over medium high heat and sauté mushrooms and onion until tender. Add one half of the chicken broth. Make a slurry with the water and organic cornstarch, salt and pepper - mix until smooth and add to the mushroom mixture. whisking continuously over high heat until the cornstarch is well integrated, and the sauce starts to thicken, add the remainder of the chicken broth and then the half and half. Adjust the seasoning and serve.
May use a thinly sliced raw mushroom as a garnish on each bowl of soup.
