Enjoy This Flavorful, Delicious Thai Chicken Satay with Peanut Sauce Which Is Also Gluten Free!

Ingredients
1 lb boneless, skinless chicken breasts, cut into strips
1 tablespoon gluten-free soy sauce
1 tablespoon fish sauce
1 tablespoon brown sugar
1 teaspoon curry powder
1/2 teaspoon turmeric
1/4 teaspoon cayenne pepper
Wooden skewers, soaked in water for 30 minutes
Peanut Sauce:
1/2 cup creamy peanut butter
2 tablespoons gluten-free soy sauce
2 tablespoons lime juice
1 tablespoon brown sugar
1 teaspoon minced garlic
1/2 teaspoon grated ginger
Water (to thin the sauce)
Instructions
In a bowl, whisk together soy sauce, fish sauce, brown sugar, curry powder, turmeric,
cayenne pepper. Add chicken strips and toss to coat. Marinate for at least 30 minutes.
Preheat broiler, grill or grill pan over medium-high heat. We use the broiler!
Thread marinated chicken strips onto soaked wooden skewers.
Grill chicken skewers for 4-5 minutes on each side, or until cooked through and slightly
charred.
In a small saucepan, combine peanut butter, soy sauce, lime juice, brown sugar, garlic,
and ginger. Heat over low heat, stirring constantly, until smooth. If the sauce is too thick,
thin it out with water until desired consistency is reached.
Serve chicken satay skewers with peanut sauce on the side.
