Italian Meatballs

These Delicious Italian Meatballs Are Bursting With Flavor!

Makes 30-36 Meatballs

Ingredients

1 lb Ground beef (20%)

1 lb Ground pork

½ med onion, finely diced

4 t kosher salt

1 t fresh ground pepper

¼ C fresh chopped parsley

½ C grated Parmesan cheese

2 eggs, beaten lightly

1 C GF panko breadcrumbs

Directions

Preheat the oven to 400° (convection if you have it).

In a large bowl, mix the first 8 ingredients until well combined.

Add the eggs and mix until well combined.

Add the breadcrumbs until well combined.

Form meatballs with about 2 T of mixture (I used an ice cream scooper).

Place onto a lined (parchment or Silpat) baking pan.

Roast on the middle rack for 18-20 minutes, or until cooked through.

(With 36 meatballs I would cook for 18 minutes. Larger meatballs closer to 20 minutes.)
