Get Ready For This Delicious, Gluten Free Irish Soda Bread
Directions & Ingredients
Preheat oven 375°
Grease large baking sheet
Whisk together thoroughly in large bowl:
1 2/3 C GF Flour
2 T Sugar
1 t baking powder
½ t baking soda
½ t salt
Stir in:
1 C raisins
(2 t caraway seeds, optional)
Whisk together in another bowl:
1 L egg
2/3 C buttermilk (may use almond milk with a teaspoon of lemon juice)
¼ C butter, melted still warm
Add to the flour mixture and stir just until the dry ingredients are moistened. The batter will be stiff but sticky. Scrape the batter onto the baking sheet in a mound 6 – 7 inches in diameter. Use a sharp knife to slash a large X about ½ inch deep on top of the batter.
Bake until golden brown and a toothpick inserted in the center comes out clean, 25-30 minutes on the baking sheet. Transfer the round loaf to a rack to cool completely before serving.
