Enjoy This Amazingly Refreshing Watermelon Salad with Cheese and Peppers
Ingredients:
1/3 C Lime juice (3-5 limes)
2-3 Scallions, white & green parts separated and sliced thin
2 Serrano chilies or Jalapeno peppers, stemmed, halved, seeded, & sliced thin crosswise (check for temperature… you may not need all the peppers)
1 – 2 T Sugar (optional)
¾ t Salt
6 Cups 1 ½ inch seedless watermelon pieces
3 ounces cotija or feta cheese, crumbled. About ¾ C divided
5 T chopped fresh cilantro, divided
5 T chopped roasted, salted pepitas, divided
Directions:
Combine lime juice, scallion whites & peppers in a large bowl and let sit for 5 minutes. IF watermelon is not sweet you can add sugar here if needed. Add salt. Add watermelon, ½ C cheese, ¼ C cilantro, ¼ C pepitas, and scallion greens and stir to combine. Transfer to shallow serving bowls. Sprinkle with remaining ¼ C cheese, remaining 1 T cilantro, and remaining 1 T pepitas and serve. Enjoy!
