Egg and Avocado Salad – hold the mayo
Ingredients
2 Hardboiled eggs, peeled and chopped
1 ripe avocado, mashed
2 T chopped celery
2 t Dijon mustard
Salt & Pepper
1T relish (optional)
Squeeze of lemon (optional)
Directions
Mix ingredients, adjust seasoning to taste. Serve on GF toast with lettuce or on GF crackers with olives.
