A Timeless Classic... Old Fashioned Meat Loaf
Ingredients:
2 C finely chopped onion
1 T minced garlic
1 Celery rib, chopped fine
1 Carrot, chopped
½ finely chopped scallion
2 T butter, ghee, animal fat
2 t salt
1 ½ t freshly ground black pepper
2 t Worcestershire sauce
2/3 C ketchup, plus additional for top of loaf if desired
1 ½ pounds ground beef
¾ pound ground pork
2/3 to ¾ C GF bread crumbs
2 large eggs
1/3 cup minced fresh parsley
Directions:
Preheat oven to 350°
In a large heavy skillet cook onion, garlic, celery, carrot, and scallion in gat over medium heat, stirring about 5 minutes.
Cook vegetables, covered, stirring occasionally, until carrot in tender, about 5 minutes more. Stir in salt and pepper, Worcestershire sauce, and 1/3 C of ketchup and cook, stirring for about a minute more.
In a large bowl combine vegetables, meat, bread crumbs, eggs and parsley.
In a shallow baking pan form mixture into 1 10 by 5-inch oval loaf and spread some ketchup over loaf if desired.
Bake meat loaf in over 1 hour, or until a meat thermometer inserted in center registers 155°
